If we invite users for an organization or project after the kick-off, but they never sign up, we have no way to track whether the invite was indeed sent out or forgotten.

Currently you can see the pending invited in your organization / project settings -> Access control --> Pending invites.
We will look into how we can improve the UX, to make this more usable.
